Host of Cooking Channel's Kelsey's Essentials and fan favorite on season four of The Next Food Network Star, Kelsey Nixon shares the essential recipes, techniques, and tools that new home cooks need in their back pocket.
A young food star and new mom, Kelsey is an invaluable friend in the kitchen to everyone settling into their first kitchen of their own. Her recipes, which are broken down into simple steps, teach readers how to cook, highlighting key tools and basic techniques everyone should know. And yet her flavors are anything but basic; Kelsey gives everyone the confidence to start with the 2.0 version of a recipe instead of the boring standards. For example, she makes her house pilaf with quinoa instead of rice, and her addictive fruit salad is a savory first course instead of a lackluster dessert.
With 100 recipes and 60 color photographs, Kitchen Confidence brings home all of the energy and spirit of the Cooking Channel show of the same name, making it an excellent handbook for newlyweds, recent college graduates, and those discovering their kitchens for the first time.

I love Kelsey!
By Lindsay Marie
I am a huge fan of Kelsey and her fabulous show, Kelsey's Essentials. I cannot even begin to tell you how much Kelsey has educated me on how to cook since I started watching her show. I have literally been waiting for this cookbook for over a year - the release date seemed to keep getting pushed back, but I ran out to Barnes and Noble yesterday to make sure I got my copy as soon as possible.
It was awesome to flip through the book, and what I saw were some "old" recipes that have been featured on her show, mixed in with a bunch of new ones. I don't mind familiar recipes because I will still use them in my kitchen, and it's nice to have them all in one spot.
The book is very nicely laid out with some pretty pictures that don't take over the book - it's chock full of recipes and tips - not just about cooking techniques, but also information about what different terminology means. I also loved the part about caring for your cast iron skillet and how to take care of it...I bought a cast iron skillet because Kelsey has always said such fabulous things about it as a tool, and she was right! So it was nice to have that information in the book as well. She makes it so easy to understand how to make the food by giving you the foundation for the technique.
Recipe categories included: breakfast, appetizers, soups and salads, entrees, and desserts. She also includes info about what you should have in your basic pantry, as well as basic tools to have in the kitchen.
Some of my favorite familiar recipes in the book: POT ROAST (I have dazzled many many people using this recipe...it is THE ABSOLUTE BEST), stuffed french toast, salmon en papillote, peaches and blueberry cobbler in the cast iron skillet
Some new recipes I am excited to try: homemade fried pickles, lemon orzo, brussel sprouts (determined to try this vegetable this year), and many many more.
All I can say is that I cannot wait to start using the cookbook in my kitchen - and I will eagerly anticipate Kelsey's NEXT cookbook.
Thanks Kelsey!!

Recipe List and my general impressions...:)
By ROE
This short but sweet cookbook is inviting and welcoming, layout is attractive - colorful, simple and cute, with many lovely pics. Just flipping through, I kind of fell in love with it. If I'd designed a layout, I'd have done it very much like this. Explanations are clear and simple - this stuff isn't hard to make!
The best thing about this cookbook, though, is The Recipes (listed below), which is really the most important thing in any cookbook. Some cookbooks are disappointing, containing only a few things I actually want to make. Here are LOTS of recipes I can USE, all in one little book. Some new basics for things I know I like and a few that seemed too frou-frou before, but after reviewing the recipe seem very doable.
It's not a complete and comprehensive "How To" for all things cooking-related, but explains all you need to know to make the food in this book and has quite a few explanations of cooking terms scattered through the book (with helpful listing of page numbers in the front.) It's a great cookbook for beginners who want to get their feet wet, learn a little, make some really good food and not work oh-so-very hard to do it.
I've made a few things and they've all been fun, easy to do and (most important!), very tasty! I HIGHLY recommend this book for an easy, but delicious collection of recipes. None of it is difficult and many things have ideas for variations listed. (I'll keep making more and if any aren't good, I'll update.)
Two things i did not like:
1. It doesn't list a "stand mixer" as a required piece of kitchen equipment, but the Rapid Rolls recipe tells us to use one. Newbies sans mixers might flip out and think they can't make the dish. A note that it can be done without a mixer would be helpful.
2. A Complete Table of Contents in the front would be helpful. You have to go to each chapter to get a list...or just print this out, because I'm about to list them for ya! - I was doing it for myself, anyway. :)

I just hate it when cookbooks don't do this for us, don't you? "Do your own Table of Contents" should be outlawed, especially where cookbooks are concerned. :)

Very excited about this cookbook!
By Kate
I've been a fan of Kelsey's recipes since I had ankle surgery in 2012 and spent the whole summer on the couch watching Cooking Channel. Her show made me so anxious to get into the kitchen and cook that I spent a lot of time wobbling on crutches by the stove!
Some of the recipes in the cookbook I can already attest are fantastic. Stuffed French Toast? Delicious. Fried Pickles? Amazing. As for all the others, I feel confident they'll be scrumptious.
The layout is simple and accessible with good notes at the beginning of each recipe (plus 'essential techniques' throughout the book). I would be proud to serve any and all of these recipes to my friends and family!
